well Europe the second largest Pork consumption in the world, and their are many Spanish pork dishes, it is one of the most popularly used meats in Spanish dishes. Plus Mexicans use beef a lot more in many dishes then they use pork , like Menudo, Barbacoa, Langua ( absolutely amazing), Skirtstake, but I can't really remember, where I heard this IDK =P (g2g I'll finsish post later)
